There is no better combination than good wine and cheese, and we love coming up with new pairings which complement each other. This annotated tasting experience features five top-notch Hungarian wines paired with a selection of the country’s best artisan cheese and charcuterie. When we opened The Tasting Table we spent months scouring the country in search of the best cheese and charcuterie. During the Communist era, the art of cheesemaking was more or less lost as mass-produced cheese became the norm. These days it is being re-discovered, but production is on a very small scale. Just as we source our wines from the region’s most exciting producers, we source our cheese directly from the country’s finest artisan cheesemakers and we buy our cured meat (mangalica pork sausages, free-range water buffalo salami, smoked duck breast, grey beef sausage, and more) straight from the farmers. Our cheese and charcuterie board is a perfect complement to the wine selection, which includes various styles of characteristic wines from around Hungary. Our sommelier will tell you the stories of everything you taste.

The Essentials of Hungarian Wine Tasting

Where do you start tasting wine in a country with nearly 100 native grape varietals, 22 wine regions, and plenty of incomprehensible names? This class is ideal for wine-lovers looking for a crash course on the increasingly fabulous wines of Hungary. This two-hour guided tasting features a carefully curated selection of eight Hungarian wines, selected from the producers who we visit regularly. We will begin with an aperitif, taste some reds and whites (and perhaps a rosé), and end with a sweet botrytized Tokaj aszú wine. Together they will tell the story of Hungarian wine, which we hope will be just the beginning of your Hungarian wine experience. You’ll get a good overview of Hungarian wine, including the history, the major regions, the important varietals, unique characteristics and styles, and promising trends. You will leave with a good understanding of Hungary’s place in the world of wine, and plenty of good wine in your belly. This fun and informative tasting is designed for anyone with an interest in wine—whether you are a newcomer to wine, or a professional—who would like to know more about the relatively unknown wines of Hungary.

Thursdays @The Tasting Table

This is when we get to introduce some of the fascinating people who we cross paths with while exploring the region’s food and wine. We invite them into our open kitchen to cook, or into our tasting room to share their wines. Our guest hosts can include chefs, winemakers, authors, sommeliers, photographers, food enthusiasts, or others who are doing fascinating things in the food and wine world. At these casual evenings, with somewhat of a speakeasy vibe, everyone gathers around our two big communal tables. Tamás (our chef) prepares the meals and food is served family-style. Wine is poured generously. These Thursday evenings are all about enjoying great food, wine, and company. We are happy to accommodate dietary restrictions, food allergies, and vegetarian substitutes, but we must know in advance! Menus may be changed due to availability of ingredients.

Thursday December 14th
End-of-the-Year Dinner with Royal Tokaji (Tokaj)

Let’s finish the year in style with a celebratory dinner featuring Royal Tokaji! This winery was one of the first foreign investments made in the Tokaj region after communism ended in 1989. It was co-founded by wine writer Hugh Johnson, whose statue sits in the winery’s courtyard. For a long time this brand was mainly known outside of Hungary, as it aimed to sell the bulk of production to the UK and other export markets. This has changed somewhat, and their wines are now very popular also within Hungary. Royal Tokaji owns many of the top vineyards around its headquarters in the village of Mád. We’ll taste dry and sweet wines this evening, with the main highlights being the single vineyard Szent Tamás aszú and a fresh 2017 esszencia (a rare treat to taste)! Join us to learn about the unique Mád terroir, and the exciting story of a winery that has managed to bring back the glory of Tokaj!

Craft Beer, Cheese, & Charcuterie Tasting

The craft beer renaissance, which has been steadily building over the last several years, has brought much excitement to the Hungarian drink scene. It started small (with just a handful of products and a few places which sold them), but has grown quickly. There are micro-breweries (both larger ones and itinerant brewers) across the country, too many craft beers to count, craft beer festivals, bars (and trucks) dedicated to craft beer, and legions of loyal fans. There’s everything from pale ale, stout, and wheat beer to a variety of fruit beers and local specialties such as a beer that used Tokaji aszú as an ingredient. Hungary’s brewers are a creative bunch, and that innovation not only includes the beer inside the bottle, but also the artistic labels and the specialized bars which are becoming mainstays of the Budapest nightlife scene. This guided tasting, led by our beer expert, will fill you in on this progressing craft beer revolution, explaining how it started, the fascinating history of Hungarian beer, and what is to come. The tasting features five top-notch Hungarian craft beer paired with a selection of the country’s best artisan cheese and charcuterie. Cooking Class & Dinner Party

Available every other Thursday, 6pm-10pm.

Learn how to cook Hungarian style in our open kitchen, where we combine a casual cooking class with a dinner party and a wine tasting. Whether you are a seasoned cook or a beginner, everyone will learn some traditional Hungarian recipes while preparing a feast together. Our chef instructor will discuss the most important Hungarian dishes and techniques, while we whip up a three-course menu, and we nibble on cheese and charcuterie. Over the course of the evening you’ll learn about Hungarian culinary traditions, how the locals work with important local ingredients, and signature (and seasonal) Hungarian flavor combinations. We believe that wine and food are best enjoyed together, so our sommelier will pour samples of different wines throughout the course of the evening so you can taste and learn. We’ll be working as a group to prepare the meal (there are no individual cooking stations), but guests can contribute as much (or as little) as they’d like to the meal preparations. Dinner should be on the table at around 9pm, when we will sit down and enjoy the fruits of our labor together, along with a few perfectly paired wines.
